After opening: ideally use within 3–6 months for best flavour and quality. Store in a cool, dry place, tightly closed and away from sunlight. Refrigeration is generally not necessary, although it can extend quality after opening. Always use a clean, completely dry spoon—water or food contamination can reduce shelf life. Signs that ghee is no longer good: Strong sour, rancid, paint-like, or unpleasant smell Noticeably bitter or stale taste Unusual mould or contamination Significant change in appearance accompanied by an off smell A little change in colour or texture (for example, becoming grainy or solidifying) is usually normal and doesn't by itself mean the ghee has spoiled.
